Freezer Meal Days with Friends

Trying to fit in time for friends and dinner prep has become a little easier this year. Brooke and Kelli, girlfriends and former college roommates from our Wildcat Court Apartment days,  have both had kids and we’ve all moved to different parts of two states. So getting together now takes planning. So why not add a little extra meal planning and prep while we get together?

A gift and inspiration

I have had lots of fun looking for  inspiration from the cookbook Fix, Freeze, Feast. Kelli surprised me with the book at the end of last year. It helped me immensely with getting prepped and organized for freezer meals and for these fun days while socializing. Some of the recipes came straight out of the cookbook and some had been modified from meals I have previously doubled and knew would make great additions to the list of meals we made each day.

The first of these dates was in January this year at my house. We made:

  • White Chicken Chili
  • BBQ Chicken
  • Tequila Lime Chicken
  • Chicken Enchiladas
  • Parmesan Garlic Pork Chops
  • Apple & Cranberry Pork Loin
  • Basil Balsamic Chops
  • Sloppy Joe Stuffed Peppers

We had our second meal-prep date at the end of April at Brooke’s home in Wisconsin. We repeated a few recipes and added a few new ones. The list of meals for round two was:

  • Parmesan Garlic Pork Chops
  • BBQ Chicken
  • Apple & Cranberry Pork Loin
  • Mini Chicken Pot Pies
  • Basil Balsamic Chops
  • Mexican Hotdish
  • Tater Tot Hotdish
  • Sweet Asian Chicken

Looking forward to the fun we will we have when we get together again next time in Esko.

I created shopping lists and instructions lists that I could send home with Brooke and Kelli at the end of each of our days of gabbing and packing freezer meals for our families. The lists helped them to remember how to heat and serve and explained different options for each meal they retrieved from their freezers.

I am looking forward to seeing Brooke and Kelli again soon. Hopefully we can find some time to squeeze in a visit before our next freezer meal day because three times a year is not often enough to get together with these wonderful friends.
